  • 2 pounds of baby potatoes
  • 1 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Rinse the baby potatoes under cold water to remove any dirt.
  3. Leave the potatoes whole or cut them in half or quarters for even cooking.
  4. Pat the potatoes dry with a clean kitchen towel.
  5. In a large mixing bowl, mix together the grated Parmesan cheese, garlic powder, onion powder, dried oregano, dried thyme, paprika, salt, and pepper.
  6. Drizzle olive oil over the potatoes and toss gently to coat.
  7. Gradually add the Parmesan mixture to the potatoes and toss until well-coated.
  8. Line a baking sheet with parchment paper or grease it lightly.
  9. Transfer the coated potatoes to the baking sheet in a single layer.
  10. Bake for 25-30 minutes, tossing halfway through for even browning.
  11. Ensure the potatoes are golden brown and crispy; a fork should easily pierce them. Bake for an additional 5-10 minutes if needed.
  12. Let the potatoes cool slightly, then sprinkle with freshly chopped parsley.
  13. Transfer to a serving dish and enjoy warm.
