- 2 pounds of baby potatoes
- 1 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the baby potatoes under cold water to remove any dirt.
- Leave the potatoes whole or cut them in half or quarters for even cooking.
- Pat the potatoes dry with a clean kitchen towel.
- In a large mixing bowl, mix together the grated Parmesan cheese, garlic powder, onion powder, dried oregano, dried thyme, paprika, salt, and pepper.
- Drizzle olive oil over the potatoes and toss gently to coat.
- Gradually add the Parmesan mixture to the potatoes and toss until well-coated.
- Line a baking sheet with parchment paper or grease it lightly.
- Transfer the coated potatoes to the baking sheet in a single layer.
- Bake for 25-30 minutes, tossing halfway through for even browning.
- Ensure the potatoes are golden brown and crispy; a fork should easily pierce them. Bake for an additional 5-10 minutes if needed.
- Let the potatoes cool slightly, then sprinkle with freshly chopped parsley.
- Transfer to a serving dish and enjoy warm.
