Ingredients
Scale
- 1 cup Biscoff Cookie Butter (smooth variety recommended)
- 1 cup White Chocolate Chips (good quality)
- 1/2 cup Unsalted Butter (softened to room temperature)
- 1/2 cup Granulated Sugar
- 1/2 cup Brown Sugar (light brown, packed firmly)
- 1 Large Egg (at room temperature)
- 1 1/2 cups All-Purpose Flour
- 1 tsp Baking Soda
- 1 tsp Vanilla Extract
- 1/2 tsp Salt
Instructions
- Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.
- In a large mixing bowl, beat the softened unsalted butter with both the granulated sugar and light brown sugar on medium speed for about 2-3 minutes until light, fluffy, and pale in color.
- Add the large egg and vanilla extract to the creamed butter and sugar mixture, beating on medium speed for about 1 minute until well combined and smooth.
- Add the room temperature Biscoff cookie butter to the wet ingredients and beat on medium-low speed until fully incorporated and smooth.
- In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
- With the mixer on low speed, gradually add the dry ingredients to the wet ingredients, mixing only until just combined.
- Gently fold in the white chocolate chips by hand using a spatula until evenly distributed.
- Cover the bowl with plastic wrap and refrigerate the cookie dough for at least 30 minutes, or up to 2 hours.
- Use a 1.5-2 tablespoon cookie scoop to portion out the dough balls, arranging them about 2 inches apart on the prepared baking sheets. Optionally, press a few extra white chocolate chips into the top of each dough ball.
- Bake one sheet at a time in the preheated oven for 9-11 minutes until the edges are lightly golden brown and the centers look slightly soft and puffed.
- Let the cookies cool on the baking sheet for 5-10 minutes before transferring them to a wire rack to cool completely.
