- Chop the Green Onions: Slice the green onions thinly, using both the white and green parts.
- Beat the Eggs: Crack the eggs into a bowl and whisk until combined. Add a pinch of salt for flavor.
- Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until hot but not smoking.
- Scramble the Eggs: Pour in the beaten eggs and let sit for a few seconds before stirring. Scramble until fully cooked but still soft (1-2 minutes). Transfer to a plate and set aside.
